Most of us know that insulin is one of the most important hormones in our bodies. Whenever we eat foods that are high in glucose, insulin's binds to a cell's receptor site, allowing glucose into the cell to be used for energy or stored as fat. When we experience insulin resistance, however, insulin and glucose don't actually make their way into our cells properly. This results in higher amounts of both floating around in our blood streams. This can cause weight gain... and inflammation, along with fatigue and increased hunger. In PCOS, high insulin levels can increase testosterone.
