Ag-ucation Monday. . . . Let’s talk hanging tenderloin, hanger or otherwise known as butchers steak. ... Why might this beautiful chunk of meat be called a butcher steak? Well, for the basic reason that many individuals do not know it exists and it often gets made into a treat for the butcher! It’s easy to send an animal to the abattoir, fill out the common cut list such as rib eye, tenderloin, striploin, sirloin, ground, ribs, stew, soup bone etc etc. However there are many hidden gems on the carcass of the animal such as the flank and skirt steaks, the offal and of course this beauty the hanging tenderloin. . . . The hanger is a connective muscle that connects the last rib and spine to the diaphragm of the animal. The meat is coarse and grainy and has a rich flavour profile because it is located near the kidney of the animal; however when properly prepared and cleaned it makes a beautiful meal and is deliciously tender to boot, hence the name hanging tenderloin. . . . Now to marinate and enjoy in a homegrown Bison stir fry! . . . The more you know, the more options you have from a single animal.
