Shared recipe from East London Child Care Baked Potato Pancakes 4 medium potatoes (shredded and drained very well) 1/4 C shredded onion... 2 cloves garlic minced 1 tsp parsley -chopped 2 whole eggs 1/4 C all purpose flour 2 tbsp panko breadcrumbs 1/4 tsp salt 1/4 tsp pepper 1/4 C parmesean cheese 1 tbsp olive oil Sour Cream for serving Extra parsley for garnish Preheat oven to 400 degrees Combine potatoes, onion, garlic, parsley and eggs in a large bowl. Add in all purpose flour, and bread crumbs. Mix to combine. Try not to over mix. We want our pancakes to be light and fluffy Add in salt and pepper, and parmesean cheese. Fold to combine Line a baking sheet with parchment paper. Spread 1 tbsp of olive oil onto the parchement paper. Do not rinse your hands. With your oiled hands portion out 8 potato pancakes. The thinner the better, we want them to be crispy. Not to thin or they will fall apart Place in oven and cook for 20-25 minutes, flipping halfway. Pancakes should be nice golden brown colour. Serve immediatley with a dollop of sour cream on each and fresh parsley for garnish.

Shared Recipe from our John McGivney Child Care in Windsor Alphaghetti 1C alphabet pasta (uncooked) 680mL Pasta Sauce... 1.5C Vegetable Broth 1/2C 2% Milk 1tsp sugar 2tsp onion powder 1tsp fresh garlic 1tsp italian seasoning (optional) 1/4tsp ground oregeno 1/4tsp paprika 1/4C shredded zucchini or carrot (optional) 1/4C shredded parmesean cheese Salt and Pepper to taste Cook noodles until el dente In seperate pot, add broth, pasta sauce, milk, spices, garlic and veggies Bring sauce to a slow simmer over med heat, cover and simmer for 10 minutes Stir Noodles into sauce Stir in cheese Let stand for 5-10 minutes, sauce will thicken as it sits

Shared Recipe from our St. Josephs Child Care Easy Meatloaf 1.5 lbs ground beef 1 egg... 1 onion-chopped 1 C milk 1 C dried bread crumbs salt and pepper to taste 2 tbsp brown sugar 2 tbsp mustard 1/2 C ketchup Preheat oven to 350. In a large bowl, combine beef, egg, onion, milk and bread crumbs. Season with salt and pepper and place in a lightly greased loaf pan. In a seperate bowl, combine brown sugar, mustard and ketchup. Mix well and pour over meatloaf. Bake at 350 for 1 hour.

Shared Recipe from Jerry McCaw Family Center Teriyaki Turkey Bowl 1 tbsp Oil 1/2 onion - chopped... 1lb Ground Turkey 1 tbsp garlic 1-2 C shredded carrots 1-2 C chopped broccoli Teriyaki Sauce: 1 C Water 1/4 C soy sauce 5 tsp brown sugar 1 tbsp honey 1/2 tsp ground ginger 1/4 tsp garlic powder 2 tbsp cornstarch 1/4 C cold water *Combine 1 C water, soy sauce, brown sugar, honey, ginger and garlic in saucepan over medium heat. Cook 1 minute. Mix cornstarch and 1/4 C water together in a bowl, until dissolved. Add to the saucepan, cook and stir until thickened, about 5-7 minutes Heat oil, add onions and turkey meat, cook. Add garlic, then add carrots and broccoli. Cook until veggies are tender. Add Sauce, cook for 5 minutes. Serve with Rice.
