Looking for an easy all purpose marinade? Think no further. To start all you need is a simple 3:1 ratio oil to acid. Just because we are tough, doesn’t mean we should be discarded. Recipes say, use leeks white and light green parts only. And yes, while I do understand we are not as tender when quickly cooked, with a little time, patience, and slow cooking, we can compete! Us, leek greens, are packed with flavour and nutrients.
