Enjoying Rosy’s rutabaga cake - this is a normal day at the FoodFund warehouse! HOW TO PEEL A RUTABAGA: 1. Wash under cold water & remove any loose soil. Using a paring knife, remove a thin slice from both the top and the bottom.... 2. Peel away the thick skin for the tender part to be visible. 3. Slice the vegetable in half, then cut 1-inch slices. Cut out any spots that are tougher than the areas around them. HOW TO AVOID WASTE - start by making a cake out of it 1. Harder spots/ parts can be added to your homemade cleaning products! 2. Rutabaga top and bottom parts are brilliant sautéed with a bit of butter and garlic! 3. Play with the small dry parts - roasted rutabaga with a dip is always a good idea! CARROTS: Why are they misshapen?! Soil preparation Carrot plants are sensitive to change and obstacles. So, it is important to properly prepare the soil for planting carrots. Heavy soil will make it difficult for carrots to grow steadily and result in very short carrots. If the soil has been loosened, this will make it easier for the carrots to grow straight and long. Dense plantation... This is when plants are placed too close together, not allowing enough space around each to grow properly. Weeds The roots of weeds can interfere with those of carrots & even take away the nutrients in the soil! Transplanting Carrots do not like disturbances & are (again) sensitive to change. Carrots do best when sown directly where they are to grow! Second growing season Carrot plants are biennials - their growth will continue through 2 seasons. Harvest the crop before the second growing season to avoid abnormal growth. Rocks & clods Relating back to soil preparation - you will want to make sure the soil is void of any possible obstacles that will get in the way of growth. If you want to grow 15cm carrots, you will want to make sure the soil is free of any debris 15cm deep. Carrots are like people - obstacles will cause us to take different directions! For today's Meatless Monday, we bring you: VEGAN TOMATO SOUP! METHOD Preheat the oven to 250C or 480F. Drizzle lots of olive oil into a pan. Add the sliced yellow onion, head of garlic cut in half, fresh basil & thyme, red chili, cherry tomatoes, MORE olive oil, and lots of salt and pepper. ... Bake everything for 25-30 minutes, or until the tomatoes are slightly charred on top. In a blender, add the coconut milk, warmed-up vegetable stock, and all the baked ingredients (except the thyme). Blend until smooth. Plate it all up with some more coconut milk, olive oil, and drops of pesto. Serve the soup with a piece of toast or grilled cheese. Time to SPICE up your life... with JALAPENOS! All ingredients in these recipes can utilize food scraps! 1. Creamy Jalapeño Salsa: jalapeño peppers, garlic cloves, canola oil, cilantro leaves and salt.... 2. Vegan Jalapeño Leaves: Vegan cheese, Cashews, Garlic, Cumin, Jalapeños, roasted onions, roasted tomatoes and thyme. 3. Jalapeño Relish: jalapeño, garlic, apple cider vinegar, sea salt and thyme. Speaking of jalapenos - when jalapenos' skin appears cracked, this is called jalapeno corking! (No relation to wine corking ). This happens when the pepper has to stretch to accommodate a rapid growth period. In other words, these are essentially veggie stretch marks. These jalapenos will not often be seen in grocery stores as these minor blemishes are considered undesirable. These peppers will instead be used for canning, where the blemishes will not be noticed. However, while corking may cause a thicker skin on the jalapeno, there is no effect on its quality. SO, what are you waiting for?! Have you ever wondered how to make your dairy products healthier and more natural? We've got you! Say no to processed products full of sugars and sodium. Let us know your thoughts and ways to prepare your own dairy products - it is always great to share tips and hear from you! ALMOND MILK ... Soak one cup of almonds overnight, straight them and discard the water. Then, blend your almonds with three cups of unfiltered water, a pinch of salt, a pinch of sugar and a tbsp of neutral oil. Blend for 30 sec, grab a straightener and serve. ENJOY MILK - no sugars added, nutritious and creamy! ALMOND BUTTER Preheat the oven to 350 degrees. Spread the almonds across a large, rimmed baking sheet and toast the almonds for 10 minutes, stirring halfway. Let the almonds cool until they’re just warm (not hot), about 10 minutes. Transfer the almonds to a high-speed blender or food processor. Blend until creamy, pausing to scrape down the sides as necessary. You’re going to think it’ll never blend, but be patient! Keep scraping down the sides and breaking up the ball, and finally, it will turn lusciously creamy. If the mixture gets crazy hot along the way, stop and let it cool for a few minutes. Once the almond butter is very smooth and creamy (no sooner!), you can blend in any add-ins you would like. I always add salt, for more flavor overall. You can also add cinnamon for a hint of spice, and vanilla and/or maple syrup for almond butter that tastes more special than store-bought. Blend until the add-ins are evenly dispersed. When I added maple syrup, I had to let the mixture cool, and then blend a few additional minutes, to make it creamy again. Let the almond butter cool to room temperature, then transfer the mixture to a mason jar and screw on the lid. Store in the refrigerator for up to 2 weeks, or until you see or smell any signs of spoilage.

What impact does Food Waste have in our lives? The UN Food Organization says that if food waste were its own country, it would have the third-largest carbon footprint after the U.S. and China, thanks to both the resources used in producing, transporting and storing food that is never eaten, and the potent methane emissions created by food decomposing in landfills. Food waste also impacts the bottom line of farmers and the food industry. The cost of growing and raising all o...f their crops and livestock, but only get paid for the amount that they sell. The profits and sustainability are cut off as the food chain is increasing its ways to produce more products. Back in January, the skyrocketing price of food in Canada dominated the news cycle. These increases the stress on both people who were already finding it difficult to afford food and the food banks who were trying to buy food to assist them. While there are many reasons for food becoming more expensive, it’s estimated that food waste equates to a 10 to 20 per cent increase in the price of food paid by consumers. It's getting BERRY romantic Introducing our special for St. Valentines: Strawberry Date Vegan Mousse Easy to make, completely raw, gluten free and creamy recipe. Could it get any better? - We know what is to crave the sweetest recipes at night so we thought...why not make a healthy-fruity dessert with some of the most tasty and nutritious food items we know: Strawberries, Dates and Cashews. Besides its flexibility and flavour, it offers several health benefits as it pro...vides vitamins and energy boost, not including the fact that this moose can produce endorphins (make you feel even happier!). Here are the instructions to make this masterpiece: First make the strawberry sauce. Blend 1/2 cup of strawberries until they form a creamy sauce and set aside. Then make the "cookie" base. Blend the almonds and the dates together in a food processor until they form a sticky mass. Don't blend them for too long. You want it to be sticky, but still a bit crunchy, so you get some nice texture. Divide the mixture evenly into two dessert glasses, pressing it into the bottom of the glass using your fingers. Next is the "mascarpone" layer. Put the cashews and the coconut milk in a blender and process until smooth. Then put about half of it on the "cookie" base (this will be the white layer). Freeze the glasses for about 15 minutes (maybe a bit longer if you want the layers to be more accurate) Then add the strawberries and blend again for a minute until the mixture becomes lightly pink. First put a thin layer of strawberry sauce on the first "mascarpone"/ cashew layer and freeze again for another 15 minutes. Then add the second, pink layer. Top it off with some cacao, some FF's dark chocolate (low in calories), strawberries, and blueberries. Enjoy!

Instructions: Bring a large pot of salted water to boil for the pasta and cook pasta according to directions. Make the Sesame Ginger dressing by stirring the ingredients together in a medium bowl. During the last couple minutes of cooking the pasta, add any veggies that need a quick blanching directly into the boiling pasta water (broccolini, asparagus, snow peas, edamame) for 1-2 minutes, until they turn bright green. Drain and rinse with cold running water until chilled. Dr...ain well and place in a large bowl. Pour dressing over top and add tofu (or chicken) and baby spinach, a handful at a time, tossing everything together well.Toss in the scallions. Taste, adjust salt and heat. We’ve told you before how much edible food is wasted in Canadian households each year now we’re going to share what you can do to reduce the issue! 1. Support local produce - While this may be somewhat more expensive, farming is the livelihood of many people in and around your city. If their crops are not accepted by grocers nor sold to the public, much of it goes to waste. 2. Plan your meals out - Check your fridge to see what needs to be used up. Use the items that may no...t last as long first (such as meats and seafood) and save other, longer-lasting items for later in the week (pasta, dairy, etc.). 3. Keep it fresh! - Did you know that how and where you place items in your fridge affects their longevity? Meats and seafoods should be kept on the bottom shelf, as that’s where it’s coldest. Also, many produce items can be stored in the freezer to prolong their freshness! 4. Embrace produce diversity - Buying the same items weekly can be boring and lead to more waste if you’re repeatedly throwing it out! Throwback Thursday! What a week it was in Vancouver, British Columbia at the National Exposition hosted by Enactus Canada! Out of the 27 food waste/food security projects across the nation, we were honoured as the National Champion of the Hellmann's Food Rescue Award and also placed as National Runner's Up for for the Scotiabank Environmental Challenge. Western University progressed into the Semi-Finals round competing with 79 academic institutions from around Canada. The success we achieved would not have been possible without your support and we want to take this opportunity to thank you for helping us change the food system for the better.

Not all eggplants are created equal! You have the conventional, the graffiti, the baby, the oriental, the Indian-eggplant and a few more. This unique eggplant gifted with a natural snout can be prepared in a variety of different styles. Think grilling, baking, frying, braising, and sautéing. Here's one of our favorite, more unconventional ways to enjoy eggplant. Slice eggplant in half lengthwise and cover the flesh with a drizzle of olive oil and 1 teaspoon each of salt, pepp...er, and granulated sugar. Place eggplant on a baking sheet, cut side down, and cook for 30 minutes in a 400-degree oven. Once cooked, top eggplant with a tablespoon of tahini, a drizzle of maple syrup, and fresh pomegranate arils. It's a hearty-yet-sweet side dish that you'll go back to time and time again. It takes nearly 100 litres of water to grow just 1 pound of Tomatoes! To think that a misshapen like this is left in the fields to rot is downright scary. But do you know what's more scary? The fact that it takes on average 1100 litres of water to harvest 1 pound of rice and a whopping 6700 litres of water to farm 1 pound of beef. Sustainability in our food system starts with the choices we make and things we put on our plate.

In a couple of weeks, grocery stores will go from having practically no squash to having so much that they must resort to putting them outside! Now for most of us, that sounds normal it happens each year. Around Thanksgiving and Halloween, squashes and pumpkins flood the market and then disappear until the following season. There is a surge in demand followed by a sharp decline. Ever wondered what the implication is for those growing it? Let’s take a deeper dive. Leading up... to the peak demand season, farmers work tirelessly to ensure that they can meet the requirements of large-scale grocery stores. However, squash that doesn’t make the cut for cosmetic reasons may get left behind. Perhaps, if it is butternut squash, it has a chance at redemption the processing plant that will turn it into soup. But the story is a little different for the other types of squash: acorn, kabocha and spaghetti. With hardly any interest from buyers now that the season is past its peak the farmer’s options are to till the crop under the field, ship it to a landfill, or send it to a feedlot where it can be fed to pigs. It is a matter of bad, worse or worst each option yields the farmer a loss. This season, our aim is to source a variety of squash and help curb the surplus when the demand begins to flatten. We're super excited to be taking a step further in the ecosystem of sustainable groceries and bringing you more of the staples that you love. Hundreds of tonnes of perfectly good rice often goes unsold post harvest if it's "broken" or "unevenly grained" -- both of which have no impact on it's taste or nutrition.
