We're thinking these retro morning glory muffins should make a big comeback this winter, and now that most of us are staying home all the time we're sure we could all use a healthy baking project to keep us busy. Why not add more soluble fibre to your diet by enjoying some parsnips this weekend? Parsnips are delicious roasted, baked, sauteed, steamed, mashed or pureed, used in stews and fried! You can even eat them raw! Try them peeled thinly & added to salad.
