You will often hear me telling my clients to eat more leafy greens. These nutrient-dense superfoods are packed with vitamins, minerals and phytonutrients like Chlorophyll. We all know that Chlorophyll is what gives plants their green colour. But did you know that Chlorophyll is in fact the blood of plants?... It's that time of the year!!! Have you started your holiday baking? What are you making that's easy, quick and an all-family-favourite? Peanut butter cookies are always a hit at our house! This is a recipe borrowed from Danielle Walkers, "Against All Grain". Give it a try, you won't regret it! INGREDIENTS: 1 cup Peanut Butter cup unsalted butter, softened... cup honey 2 eggs 1 cup almond flour tsp baking soda tsp salt tsp cinnamon INSTRUCTIONS: Cream peanut butter, butter, and honey in mixing bowl until smooth. Add eggs one at a time and beat for about 1 minute. Combine dry ingredients in a small bowl, then slowly add them to the wet ingredients until blended. Drop spoonfuls of dough onto a lightly greased cookie sheet. Bake at 350 for 10 minutes, or until browned on edges.

Roasted chicken from Wild Meadows Farm - raised on pasture where they can roam freely and feed on grasses and bugs, just like nature intended. They are also fed a clean non-GMO diet without any corn and soy. Tip Tuesday: Immunity and supporting vitamins. We all know that our immune system is our body’s natural defense system. It works by recognizing the difference between the body’s own cells and foreign cells, allowing it to destroy any particle/organism that could be potentially harmful. Our diet, our stress level, circadian rhythm fluctuations and other outside factors can influence how well our immune system functions. I'd like to share a few supporting nutrients you may wan...t to consider over the winter months: - Vitamin C (my all-time favourite): 1,000-2,000 mg per day if you are generally healthy, more if you have underlying conditions. Vit.C is crucial for hormonal and adrenal health too!! - Vitamin D3 (cholecalciferol): between 1,000 - 5,000 IU per day - the higher dose is recommended for people in northern climates. - Zinc: at least 15mg per day for maintenance and up to 30mg per day if you develop cold symptoms. - Vitamin A: 2,000 mcg is helpful for maintenance (you will probably get this dose in a good multivitamin) - I also like to have Medicinal Mushrooms on hand as well as Bee Propolis and bee pollen...but more on that later. Over the next few weeks I will address more ways to support immunity and a healthy body with diet and lifestyle. Stay tuned! Have you ever tried making hummus at home? It’s so easy and quick! Not to mention you’ll be saving money and get to control what goes into it (all those additives and bad vegetable oils). I’ve used roasted red beets in this combination and it was not only delicious but healthy and pretty too! Red beets have numerous health benefits such as lowering blood pressure, improving blood flow, reducing inflammation, boosting the immune system and increasing athletic performance. Yo...u can also make hummus with black beans, golden beets, roasted red peppers, marinated artichokes or ripe avocado. Each time you’ll get a different taste and colour. Be creative! For this particular combo I used canned organic chickpeas, tahini paste, garlic, lemon juice, EVOO, S&P. Blended all ingredients in the food processor until desired consistency is achieved. Add a little bit of water if necessary. This would work well as holiday dip with veggies or rice crackers. What is your favourite holiday dip?

Do you ever roast your own nuts? I often do because it gives me the opportunity to play with different flavours and mix things I wouldn’t otherwise. For example in this batch I used Tamari and Tajin (chili and lime). Plus when you buy them raw, unprocessed and unsalted, you get to control the amount of salt and the type of oil used, since store-bought nuts tend to contain too much salt and are usually roasted in bad canola or vegetable oil.... I usually make a weekly batch which we use as a snack or topping for salads. Nuts are one of my favourite sources of good fats! What are yours?

Meatless Monday: Armenian Tabouleh Refreshing, detoxing and full of nutrients like lycopene in tomatoes, a powerful antioxidant known for reducing risk of certain types of cancer and parsley - rich in vitamins C, A, K, B12 and bioflavonoids - great for immunity, diabetes, UTIs, inflammatory conditions. And of course the mighty Lemon, of which I added not one but two (freshly juiced)! The twist here is the addition of roasted red peepers which gives this Middle Eastern dish a...n Eastern European flavour . Made with burghul: high fiber organic cracked wheat. Topping: Bulgarian sheep feta which you can skip for a totally #vegan version. My Lebanese friends tell me that the parsley should be gently sliced not chopped, to avoid bruising. I was craving a Thai curry tonight but wasn’t too keen on ordering in again - we’ve been happy to support local restaurants quite regularly in the past few months and had excellent experiences. But tonight I wanted something comforting, with that home-made feel to it. And so... voila! This is my Thai Coconut Curry with red lentils, sweet potatoes and cauliflower. No exaggeration- it is the best curry I’ve ever made (yes, tooting my own horn, I know ) but really, it turned ...out incredibly delicious!! And so easy to make! And did I mention healthy? If you make a bigger batch you can keep it in the fridge for up to 4 days and use the leftovers in creative ways: for example I’m thinking of adding some nice Argentinian shrimp to it tomorrow and turn it into a seafood curry. Fancy a turmeric latte on a Friday afternoon? I love mine with coconut or macadamia milk! The health benefits of turmeric (and its active compound curcumin) are impressive! It is a potent anti-inflammatory and antioxidant powerhouse that’s been around for thousands of years and used in traditional cultures in the treatment of pain, autoimmunity, depression and anxiety to name a few. What are your favourite brain foods? In my practice and in my home we love avocados, fish, nuts and seeds, coconut oil, turmeric, raw cacao (dark chocolate), medicinal mushrooms like Lion’s Mane and of course a variety of berries! This tuna salad is so so good! Made with olive oil, glass-packed tuna @zarotti_official, my own organic, home-made kefir (instead of mayo), red onion, radish, parsley and dill. Oh, and finely chopped jalapeno peeper. Also added some nutritional ye...ast into the mix for fun and extra B vitamins! Super creamy and delicious, ideal for avocado or zucchini boats or on dark rye toast with a side of green salad. Yummy!

Have you tried making stuffed peppers with cauliflower rice instead of white rice? I have to say I was doubtful but they turned out really nice and my boys liked them too! This is a low-carb, high-nutritional-value proposition for those who are looking to try something new. I used market-fresh peppers, nose-to-tail ground beef which is about 80% grass-fed and finished beef and 20% organs such as liver, kidney, heart - making this combo a nutritional BOMB!!! Thanks Wild Mea...dows Farm your grass fed beef is The Best!!! I know most people shy away from eating things like liver but hear me out: liver is the most nutrient-sense superfood on the planet! Organ meats in general are 10-100 times higher in nutrients than muscle meat (steak). It’s TOMATO time!!!! Who else loves tomatoes?? Growing up in Eastern Europe, I, like many others of my background, know what a real tomato tastes like! I am so very thankful to friends who feel the same about tomatoes and are happy to share their bounty! Some are from my own garden, some come from Serbian seeds, others from Italian. So healthy and so fresh, you can have tomatoes in salads, sandwiches and soups like this Andalusian Gazpacho, a traditional cold soup eaten in t...he southern regions of the Iberian peninsula. De gazpacho no hay empacho, the Spanish say, meaning You can never have too much of a good thing (or gazpacho) . It is great for any meal (the Spaniards and some parts of Italy eat it for breakfast), and the leftovers can be used as a sauce for pasta or other casseroles. With so many health benefits due to their rich antioxidant content of lycopene, tomatoes have been linked to reduced risk of cancer and heart disease as well as improving vision and skin tone, lowering blood sugar, and easing Menopausal symptoms! When you crave fish...you make it! I love pickerel because it’s light, buttery and delicious, not to mention it’s one of the healthiest and safest fish to eat (extremely low contamination).
