There's a new Indian food in town. @SurreyBC is now one of the first cities in Canada to really embrace the incomparable, the magnificent, chaat. How do we explain chaat? It's a style of Indian snack food with an incredible flavour loved by everyone. It is a guilty pleasure. The spice mix used for chaat style food is so distinct and delicious, there is no mistaking it. If you're in Surrey, DO please go visit @apnachaat, they do curbside, and be prepared to be mind-blown. Mumb...ai Local in Vancouver is also trying get in on the chaat market. (We can't wait until someone out east starts making authentic chaat.) https://www.cbc.ca//bri/chaat-food-indian-surrey-1.5970703

For you real Indian food enthusiasts, no hobby beats making your own masalas or spice mixes. Sambar Powder is a south Indian spice blend that is used to add incredible flavour to many varieties of dry curries and vegetable dishes. It is generally made from toasted ingredients like red chilies, lentils, coriander seeds, mustard seeds, cumin seeds, curry leaves and fenugreek seeds, and lentils. The spices are first roasted and then ground into a powder form which can be added to sauces. This recipe from vegrecipes of India is a perfect Sambar, and if it's too many steps (many could be combined, we think), you might just try getting it at your local Indian grocer. It's one of those mixes that will broaden your culinary palette! https://www.vegrecipesofindia.com/sambar-powder-recipe-hom/
