It’s Taco Tuesday!!! Here’s the way I like to make a Spicy Taco Burrito Bowl... Here’s an easy recipe that satisfies any Mexican food lover! 1 lb ground beef or Turkey or venison 1 730ml jar salsa (I chose hot) 1 796ml can diced tomatoes 1540ml black beans 1350ml corn 2 cups riced cauliflower Add Spices to your liking : Cayenne, chilli, pepper, sriracha, salt, pepper (I used 1/2 tsp of each - except for the sriracha and cayenne where I added a full tablespoon! Grated cheese to top while serving. Directions: Brown meat in fry pan. In separate large pot dump all ingredients including cooked ground meat. Heat and let simmer to let the flavours soak into the meat. Taste and spice more if needed Serve in bowls and sprinkle on the grated cheese. Now for the Nauchos!! Eggggza!! Ok it’s a frittata ! BUT when you place 3 cups of sautéd veggies (mushrooms, peppers, chopped sweet potato, onions if you like) and bacon pieces and spread them out on a parchment lined cookie sheet and pour 9 whisked eggs and splash of milk- it starts to look like PIZZA! Bake at 350 for 20 minutes or until done and then sprinkle your choice of grated cheese (mozzarella for me). Slice into pizza size slices and a drizzle of Sriracha ! The left overs are good too!!
