Have you been apple picking yet this season? If you're like me you get so many you wonder what to do with them all! I love to bake with them! Here's a recipe to try!!! Apple Pita Pie Ingredients 1 large apple peeled... 1 tsp pure maple syrup 1/2 tsp cinnamon 1/4 tsp cornstarch organic 1 oz cheese of choice 1 Pita Instructions Preheat oven to 350 F. Spread goat cheese over pita. Slice apples and toss with remaining ingredients, arrange apples on pita and bake 10 minutes uncovered and then loosely cover with tin foil and bake another 15 minutes. Looking for a yummy, comforting fall soup? Look no further!! Roasted Tomato and Butternut Squash Soup Ingredients:... 2 Ripe pears, peeled, quartered and cored 2 lbs butternut squash, peeled, seeded and cut into 2inch chunks 2 medium tomatoes, cored and quartered 1 large leek, pale green and white parts only, halved lengthwise, sliced 2 cloves garlic, crushed 2 tbsp Simply For Life Olive Oil 1/2 tsp salt, divided Freshly ground pepper, to taste 4 cups organic or homemade broth 2/3 cup crumbled feta cheese 1 tbsp thinly sliced fresh chives, or scallion greens Directions: Preheat oven to 400F Combine pears, squash, tomatoes, leek, garlic, oil, 1/4 tsp salt and pepper in a large bowl. Toss to coat. Spread evenly on a large rimmed baking sheet. Roast, stirring occasionally, until the vegetables are tender, 40-55 minutes. Let cool slightly. Place half the vegetables and 2 cups broth in blender; puree until smooth. Transfer to a large saucepan. Puree the remaining vegetables and 2 cups broth. Add to the pan and stir in the remaining 1/4 tsp salt. Cook the soup over medium-low heat, stirring, until hot, about 10 minutes. Divide among 6 towns and garnish with cheese and chives *Makes 6 servings
