This is Peruvian corn from Cusco called Choclo. You’ll notice that the corn is white and the kernels are large - very different than the corn we are used to seeing in North America. They kernels are so large, you can actually pick them off individually to eat! The flavour is not as sweet as the typical yellow corn many of us are used to. The kernels are starchier and chewier and the flavour is delicately nutty. Choclo is typically served with ceviche, one of Peru’s most fam...ous dishes! But if you ever have a chance to visit Peru, you’ll also see many street vendors selling ears of choclo corn with a slice of cheese - Choclo con Queso. Alternatively, the corn kernels are served loose. They take the dry kernels and rehydrate and boil them until the outer layer comes off (called mote) or deep fried until crispy. This popular snack is commonly found both in homes and restaurants. One thing to keep in mind, this corn is just ONE of 55 types available in Peru! They come in a variety of colours and flavours and each plays a different role in the way of life in Peru. As the temperature drops we start dreaming of bowls of comforting soup... This comforting Cream of Garlic Soup comes from the kitchen of decorated chef, Ted Fondulas. It was a favourite at Ted's former groundbreaking New England restaurant, Hemingway's. He is known throughout the culinary world for being a trailblazer in farm-to-table dining, is the recipient of AAA four diamond awards (for nearly 20 years!) and has had features in national magazines like Food & Wine, Esquir...e and more. INGREDIENTS: - 2 tbs. olive oil or as needed - 1 leek, medium, white part only, coarsely chopped and thoroughly washed (about 1 cup) - 10 garlic cloves - 1/2 lb. smoked ham (preferably from Vermont) cut into 1-inch pieces - 6-7 c. chicken stock or light game stock - 1 lb. boiling potatoes, peeled and cut into eighths - 1/2 c. whipping cream - coarse salt and freshly ground white pepper - fresh minced chives or flat-leaf parsley to taste INSTRUCTIONS: 1. In large stockpot heat oil over medium-low heat. Add the leek, garlic, and ham. Cover and cook until vegetables are slightly tender and translucent but not brown, about 10 minutes, stirring occasionally. 2. Remove cover and add stock and potatoes, stirring to combine well. Bring to a simmer over medium heat and cook until leek, garlic and potatoes are fork tender, at least 30 minutes, stirring occasionally. 3. Remove from heat and remove ham. Working in batches (if necessary) transfer mixture to a blender and purée. 4. Transfer purée back to stockpot. Slowly whisk in cream, and heat through. Adjust seasonings with salt and pepper to taste. Ladle into warm soup bowls. Garnish with chopped chives or parsley. Bon appetit! #dinnerinspo #dinnerideas #recipe #topchefrecipe #fastdinners

One of our favourite recipes is Simple Roasted Tomatoes. Anchovies: We know not everyone is a fan, but some of the best in the world can be found right here in San Sebastian and you can be sure that the chefs here know how to prepare them! Codfish: Way back in the day, Basque fisherman where fishing far and wide for Codfish. It is rumoured that this is where salt cod was invented. Salt cod is a common part of Basque cuisine and you will find endless dishes made with this fish. Kokotxas: Also known as "fish cheeks".
