Citrus season is in full swing! We love fresh citrus fruits, and one of our favorite indulgences are Sumo Mandarins. Super sweet, seedless, large and easy-to-peel Sumos are a serious treat-yourself citrus fruit. What's your favorite citrus of the season?

Make a sweet gesture to loved ones over the breakfast table with a heart shaped egg-in-the-hole! We love this playful way to prepare eggs and toast and with the help of a simple cookie cutter, you've already begun to show your love before lunch! Use a medium-sized heart shaped cookie cutter to remove the heart from a slice of bread before adding the bread to a buttered skillet heated over medium-low heat. Crack one egg inside the bread and cook on medium-low heat for 2 minutes until egg has just set. Flip the toast and egg together and cook on the opposite side for about 2 more minutes until the egg is cooked. Season with salt and pepper and serve to kids, sweethearts, or enjoy all for yourself!

Pecan pie is a fall classic! What do you add to your pie to jazz it up? One of our favorite variations has dark chocolate, another has chocolate and bourbon, and we've even enjoyed a pecan pie featuring salted caramel! No matter how you bake your pie, top it with something extra - a spiked whipped cream! Whip one cup of heavy cream with 1/4 cup powdered sugar. Add in 1 teaspoon of vanilla extract and 1 tablespoon of bourbon.

What are your favorite Mac and Cheese additions? Try adding cruciferous veggies like broccoli or cauliflower for a healthier slant. Peas are another family favorite! For even more variation try mixing in diced ham and apple (or pears!). Looking for more decadence? Crispy bacon on top is always a delicious idea.

The flavors of rich dark chocolate are paired with light and bright citrus in a classic holiday duo. A cookie that tastes so sophisticated, you’ll be happy you if you chose to make a double batch! http://ow.ly/RETg50Covvg

We are baking up a storm during these cooler months. For breads that have fillings, like a raisin swirl bread, cinnamon rolls, or sticky buns, chill the dough overnight, or freeze for 30 minutes. The cold will stiffen the dough, make it less sticky, and increase your ability to roll it out to the desired size.

Want to know our go-to finishing touch on any galette (or really, any winter baked good with a pastry crust)? A nice brush of egg whites, followed by a healthy dose of raw sugar. The sugar gives the crust a sweet, caramelized crunch, and looks beautiful to boot! Any tricks you care to share?

Our quick tip turns any cake into a Halloween cake: have some black gel food coloring on hand! Start with a dark cocoa and dark chocolate buttercream (typically looks dark brown but not black) then add black gel to your buttercream frosting. Chill overnight (for an even deeper black result), then bring to room temperature and slather on your next cake for a beautifully festive sweet treat. We love how dramatic this effect is. Add some orange sprinkles and some eyeballs, and you're in business for a spooktacular celebration!

Make a garlic-infused cream for richer mashed potatoes! Heat the butter, garlic, and whole milk in a small saucepan over medium heat, stirring occasionally for 4-5 minutes until the garlic has infused into the milk and the butter has melted. Strain out the garlic and discard. Use the cream in the mashed potatoes!

KIDS IN THE KITCHEN: Play a fun tasting game with the kiddos today! Before serving a meal, simply have kids close their eyes and try a bite of food (they might need to be fed the bite for ultimate secrecy). See if they can identify the dish. Bonus points if they can name 3 ingredients used! (Psst. For those who might not know, this is a baked mac n' cheese and bechamel sauce!) This guessing game is such a fun way for them to become familiar with spices and flavors.

Enjoy this easy weeknight dip as an appetizer, or a full on meal. In a small bowl, combine 1 cup finely chopped kalamata olives, 1 tablespoon capers, 1/4 cup chopped pickled hot peppers, 1 teaspoon fresh mint, 1 teaspoon quality olive oil, 1/8 teaspoon salt, and 1/8 teaspoon pepper. PRO TIP: Mirepoix Make Ahead! With soup season in sight, prepare the mirepoix (the carrots, celery and onions) in large batches and freeze for winter soups, stews and sauces. Peel, chop, and sauté, then let cool. Freeze in vacuum bags or pod containers for fast soup and stew starters.

Take care of your yeast with proper storage and careful preparation! To check its activity dissolve yeast in warm water or liquid that's between 105-115F. Use an instant read thermometer to check the temperature, or check with a drop to the inside of your wrist; it should feel warm, not hot. Make sure that all the recipe's ingredients are at room temperature when combining with yeast cold eggs, for example, will shock the yeast at this early, tender stage and may stunt the yeast's growth.

Q: How can I tell if my homemade bread is fully baked through? A: There are several ways to assess doneness. First of all, follow a reliable recipe and its instructions for pan size, oven temperature, and timing. Check the color of the baking bread. Invert a loaf and tap on the bottom; it should sound hollow. Or, know definitively by using an instant read thermometer. Breads with primarily flour and water will be done when the internal temperature registers around 200F. Breads containing eggs or fat will be done at around 185F internally.

Use an old trick of soup makers, save the rind of a wedge of Parmesan cheese, and throw it in the pot. The hard cheese rind adds a layer of flavor and builds more of the fifth taste sensation, umami.

Seven layer bean dip is a frequent dish around here. It's filling and (mostly) healthy, but sometimes it can look, well, less than appealing. Instead of assembling in a deeper dish, use a serving platter and spread it out. Mix 1 can refried beans with taco seasoning. Spread it out on a serving platter. Add a layer of sour cream followed by a layer of salsa. Sprinkle with washed and dried black beans, tomatoes, green onion, black olives, and shredded cheddar cheese.

Dress up homemade cinnamon rolls this weekend with our extra decadent Orange-Almond Cream Cheese Frosting! Mix the frosting by combining the 1-1/4 cups powdered sugar with the 6 oz softened cream cheese and 2 tablespoons softened butter. Add 1 teaspoon each of almond and vanilla extract, 1/4 teaspoon kosher salt, and the zest of one orange. Whisk all together. Set aside until the rolls have cooled partially. Then generously slather on top of the rolls.

KITCHEN HACK: The magical egg slicer! It can do more than slice hard boiled eggs. It works well for achieving even slices with strawberries, fresh button or baby bella mushrooms, and even pitted olives. Our favorite hack? Use it to cut even banana slices to use in your dehydrator! (Just cut bananas in thirds to fit in the slicer first.)

PRO TIP: We love making homemade tomato sauce, but sometimes it can get a little too acidic. The trick? Add a pinch of sugar, which cuts through the acidity of the tomatoes and leaves the sauce well rounded. Now dig in!

Take care when doubling recipes for the slow cooker. The different quantities will change the cooking times. In any case, aim for half or two-thirds full and do not fill the slow cooker more than three-quarters full.

PRO TIP: We love making handmade pasta, but sometimes the convenience of dried pasta is what we're after. Our handy boxed pasta boiling tip: the amount of water counts! A general rule of thumb is four quarts of water per pound of pasta. A large quantity of water allows the individual pasta shapes to dance in the rolling water, and allows the pasta to cook more evenly and not stick together. As always, remember to properly salt your water before boiling!

Looking to speed up the ripening of your fruit? Put them in a paper bag with a banana! The paper traps ethylene, which is the natural gas emitted by fruits to encourage neighboring fruits to ripen (tip - this will not work with plastic bags!). This hack works particularly well with fruit that contain a pit, like mangos and avocados, but it even works with melons!

Williams Food Equipment 03.04.2020

Feel summer slipping away? Next time you're at the store, stock up on frozen fruit favorites like mango, blueberries, and raspberries (or tapping into the summer bounty you've frozen yourself). Then channel those sunny day vibes with homemade frozen drinks. We're particularly fond of this Mango Smoothie! Simply blend together 1/2 cup Greek yogurt, 1 cup frozen mango chunks, 1/2 banana, 1/2 cup ice, and water as needed to thin.

Letting kids get creative in the kitchen is a great way to help them learn about their particular tastes, And, there's the bonus of fostering cooking independence! For school lunches this week, let kids make their own sandwiches from their own creative condiment combinations! There might be some total flops, but they also might discover the new PB&J! Cucumbers and hot sauce? Great. Kimchi and turkey. Why not roll with it? What pleasant lunch-making surprises are you planning?
