Fast food recipe. This is one of my favourite on the go meals. As long as you have a microwave you are gold. Years ago my dad taught me the value of the microwaved baked potato (he also taught me how to knit, but that’s another story). That’s the warm part of the meal. When they go in the nuker, I wash my lettuce (wrap it in paper towel and toss in the fridge). Open and drain the can of tuna. Make a quick oil and vinegar salad dressing (I like lemon juice squeeze from ...a real lemon, a few drops of wine vinegar until is changes colour a bit, an equal amount of a good quality virgin olive oil and the some chopped or pressed garlic and freshly ground pepper with a half tsp of dijon mustard - I like Maille but read the ingredients because they decided to put wheat in the squeeze bottle lately; the jar is still okay as of two weeks ago when I last checked). Potatoes done I chop them and put them In The bowl first smothered in butter and freshly ground salt and pepper (yes it makes a huge difference). Then I add the tuna. Tear the lettuce and chop up some onion or tomato or anything I like I salad that I have hanging around. Tonight it was romaine and white onion. Then I pour the salad dressing over the lettuce and tuna (very important step) and dig in. Glass of wine on the side. Less time than a drive through I will hate myself for afterwards. Under $5 for the meal (not including the wine -but close).
